Tarte d’endives au miel et au chèvre

Endive is a vegetable that I consume a lot, raw or cooked. Cooked with a little honey, it gains sweetness and is delicious. One evening a week, after my workout session, I consume a comforting dish of chicory. It is a fresh and healthy product that I love, soup, salad or simply braised. Endive contains magnesium: this trace element helps me to relieve muscle pain and speed up the recovery process. It is also rich in minerals such as copper, zinc, iron, calcium and potassium! During the sports effort, sweating causes a loss of minerals. They are essential to the body and its metabolic function. They participate, in particular, in the water balance, the transmission of the nerve impulses and the contraction of the muscles. I am therefore a follower of this vegetable-leaf, particularly low caloric (17 calories 100g!) Is very interesting to promote the good muscular recovery of the sportsman. Peel them, dissolve the leaves between them and remove the heart. In a skillet, heat the olive oil. Bring back the chicory   for 5 minutes, until golden brown. Add honey and let caramelize for a few moments, over a high heat, stirring occasionally with a wooden spoon. Place your dough in a non-stick ovenproof cake pan. Spread the goat cheese over the dough. Divide the braised and caramelized endives. Bake endive pie with goat cheese for 40 minutes. You can accompany it with a nice green salad or lamb’s lettuce with vinaigrette. Enjoy your meal !
