Gratin de volaille, brocolis et muscade

I received this morning a request from an Instagram subscriber who wanted to know how to make a light béchamel. I propose the recipe below to try to answer his request! For two people. Ingredients: 2 chicken breasts, 1 beautiful broccoli, 1 shallot, 4 large button mushrooms, 1 cream of soy cream, cornflour, nutmeg. Rinse and cut the broccoli florets and mushrooms. Preheat the broccoli for a few minutes in boiling water. In a salad bowl, mix: the two chopped chicken breasts, broccoli, mushrooms and a minced shallot Mix the soy cream and 1CS cornflour. Season: nutmeg, salt and pepper to taste. Pour the mixture over chicken and vegetables. (To brown the gratin, I added a little lean gruyère but you can do without!)
