COCO & CURRY CHICKEN PIE

To pronounce “Tahte Chicken Coco Cuhy” with the accent … Hmm hmm ok, I go to the recipe: Ingredients: If you’re lazy like me tonight: an organic puff pastry ready to roll out If you are a warrior and want to make your own dough: I invite you to check my pie recipe here ! 2 chicken cutlets 2 tomatoes 1 minced shallot 2 eggs 2 teaspoons of curry 50 cl light coconut cream Recipe Preheat the oven to 180 degrees Slice the chicken into small strips and cut the tomatoes into cubes. In a salad bowl, mix the two eggs with the coconut milk. If you do not like coconut milk you can replace it with soy cream. Add 2 teaspoons of curry and season (salt & pepper) Pour the chicken strips in this mixture and mix well. Add the diced tomatoes and minced shallot. Spread the dough in a pie pan and pour the mixture. Bake for 45 minutes at 180 degrees To serve with a green salad. Hmm yum, yum! Bon appetite my loupiotes!
